Recipe: Pumpkin It Up Muffins

These were supposed be cupcakes, but I tried them without the frosting and thought it was a lot better. Quick and easy, and probably healthier than following the instructions on the cake box (but maybe not by a whole lot.)

  • 1 box of Spice flavored cake mix
  • 1 15 oz can pumpkin (just plain old pumpkin, not the pie mix)
  • 2 eggs
  • 1/4 cup of sugar
  • dash cinnamon (optional, but I really like cinnamon so I put extra in almost everything!)

Mix it all up, spoon it into muffin tins, and bake at 350 degrees for 18 – 22 minutes. Enjoy while ruminating on the coming holiday season. Shudder.

    Sounds good! I bet a little cinnamon-sugar sprinkled on top before baking would give them a sweet and crunchy top.

    That does sound yummy! I tried a similar recipe that added a sort of cheesecake like center…. so tasty. I love pumpkin!!
