Banana Chocolate Chip Mini Muffins

Do you happen to have three or four super ripe bananas laying around? So ripe that they are treading the fine line between "very ripe" and "grossly rotten"? I did a little earlier tonight, so I turned them into some really yummy mini muffins. If you're doing Weight Watchers, you'll be happy to hear that it's only 2 points for 2 mini muffins! And if you're not doing Weight Watchers… they are quite a tasty treat any way.

  • 3 Tbsp vegetable oil
  • 2/3 cup unpacked brown sugar
  • 3 large banana(s), or 4 medium, mashed
  • 1 large egg(s)
  • 1 large egg white(s)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp table salt
  • 1/3 cup Silk Vanilla Soy Milk
  • 1 tsp apple cider vinegar
  • 1/2 cup semisweet chocolate candy

Preheat oven to 350ºF. Coat a mini muffin tin with cooking spray. There's not much fat in these babies, so coat it good!
Blend together oil and brown sugar. Beat in bananas, egg and egg white.
In a separate bowl, whisk together flour, baking powder, cinnamon and salt.
Combine vinegar and soy milk to make buttermilk substitute. (Or just use buttermilk, if that's what you have laying around!)
Gently stir half the flour mixture into banana mixture; stir in buttermilk substitute, remaining flour mixture and chocolate chips.
Divide
batter among muffin pans. Bake until a toothpick inserted into center
comes out clean, about 10 to 12 minutes. Let cool in pans for 10
minutes before inverting onto a rack to cool completely. Or, do what I did and enjoy a couple while they're still warm and gooey. Yum!
